I recently read the book, “Grain Brain” written by Dr. D. Perlmutter. He is a renowned neurologist which talks about the devastating truth about the effects of wheat, sugar, and carbohydrates on the brain. The Dr. explains increased use of carbs as a food source and how it has affected our population.
We are experiencing more diabetic obesity and metabolic syndrome then ever before and rising.
He explains our ancestors ate 75% fat, 20% protein and only 5% carbs. The typical diet today is 60% carbs, 20% protein, and 20% fat. Carbohydrates make our insulin release from our B cells of the pancreas to take the sugar out of the blood stream and it is put into the cells.
If not needed there, it is converted into adipose tissue (fat), and stored. Eating fat and protein do not spike your insulin, also fat and protein calories do not produce adipose tissue. Diabetes type 2 is a risk after prolonged exposure to carbohydrate diets. Diabetes doubles your risk of Alzheimer’s disease, as well as increases your risk to cardiovascular disease.
